Ok Y’all, you know I am a TX girl at heart! I love where I live and am bursting with so much TX pride that I could explode at times. I love that our state is so big that you have the beach, mountains, desert, forests, and even rolling hills. You have your cowboys, musicians, surfers, techies, oil boomers, engineers, and then your teachers/bloggers like me. And then there is the food…oh my the food! Hence the reason I frequent the gym. You will find some of the best Mexican & Bar B Que food in the world here in TX. We eat it on a weekly basis at least.

So, when I was asked to write a review for the Gourmet Warehouse of Hilton Heads Bar b que sauce and spice rub from South Carolina I was a bit of a skeptic. I said yes, not knowing what I would think, but was going to be open minded about giving it a try. I was sent some Applewood smoke seasoning and Sweet Heat BBQ Sauce. I was very excited to try these items so my husband and I grilled out this past weekend and made us some Bar B Que Chicken & Sausage. Whoo Hoo!

I rubbed the chicken with Applewood smoked seasoning before grilling and then basted chicken & sausage with the bbq sauce when they were both almost done. Our family thought that the rub and sauce added a unique burst of flavor throughout the chicken & sausage that was very tasty. The sauce and rub were very similar to our TX bar b q and we were all very impressed. It was delicious and we will be using both in other recipes as well.  I would like to try adding the sauce to some baked beans or homemade dip. I think that rub would also enhance the flavor of fish & game. We look forward to trying more Gourmet Warehouse products in the future!

Bar B Que Chicken & Sausage


  • 4-6 chicken breasts
  • 2 links of sausage
  • 2 Tablespoons of Applewood smoke seasoning (or your favorite spice rub & seasoning)
  • Sweet heat bbq sauce


  1. Heat your grill to a medium heat.
  2. Rub the seasoning all over the chicken.
  3. Grill the chicken for 10 minutes on each side or until it is no longer pink inside.
  4. Baste your chicken, using a basting brush, with the bbq sauce to your desired liking.
  5. Grill your sausage until it is cooked through.
  6. Once it is done, baste the sausage with the bbq sauce.

Hi everyone, I hope that each of you are doing well this weekend. We have had a busy week traveling around to see family in Corpus Christi and friends in Austin. I have all kinds of crazy good news for you today! While we were gone I received some exciting news! Now on to some other good and yummy news. Have you ever tried Orzo before?  Orzo is a pasta in the shape of rice that goes well as a side, in soup, or casseroles. It’s perfect to have on hand because it doesn’t go bad quickly. You can store in your pantry in an air tight container for a really long time. This is great for our family because I am sometimes grabbing for things to eat at the last minute and I don’t always have time to plan ahead. I do this with a lot of our veggies too. I always keep about five different frozen veggies in the freezer for convenient cooking. I LOVE fresh vegetables and fruit, but sometimes they will go bad before I get a chance to cook them. So unless I know I will be cooking/eating something right away I keep things stocked up in my freezer. Same with the chicken. It’s great to keep some breasts frozen for those unplanned/last minute meals. So basically everything on this plate, except for the Feta,  you could keep stored for a delicious homemade back up meal.  How awesome is that! SO, next time you go to the store pick up some chicken, green beans, and Orzo and either make soon or surprise your self with a great meal when you thought you didn’t have anything to throw together. You will not be disappointed with this healthy little plate!

  • 8 oz. dried orzo (1 1/3 cups)
  • 8 oz. green beans (frozen or fresh)
  • 1 lb chicken breasts
  • 2 Tbsp. olive oil
  • 4 oz. crumbled herb Feta cheese


  1. Cook your Orzo according to package instructions. Set aside.
  2. Cook green beans according to package instructions. I bought frozen green beans that I microwaved for 7 minutes on high.
  3. Brush your chicken breast with olive oil and season with salt and pepper. Grill over a medium heat for about 10 minutes on each side of the breast. Or until no longer pink in the center of the breasts.
  4. Make a bed of Orzo on your plate. Layer the green beans and chicken on top of the Orzo. Sprinkle with the Feta cheese and salt and pepper if desired.

How is everybody doing today?  We are all doing well so far this week. Everybody is healthy and FULL of energy at our house (meaning the two little boys… my husband and I can’t seem to muster up half the energy that is bottled up inside those two! ) My boys are the ages of 3 and 4 (almost 5) and we are just now getting to the time in our lives that we can actually go out to dinner on a Friday night and then come home to play games before bed. It’s just wonderful! And I honestly thought these days would never come. We still have to play it safe though and go to dinner early (like 5 o’clock or so) and then be home winding down by 7.  And then my husband and I can enjoy a movie night or just go to bed early because these little guys wear me out! We are not into late nights yet. 😉

So this past Friday night we went to a place in San Antonio called Bigz. It’s a hamburger restaurant and in the back they have this huge yard where all the kids just run and play, throw Frisbees, and footballs. My kids love it! I love that there isn’t a play scape and they can just run and make believe however they want. Kind of like when I was kid and you just ran and chased each other around and had the best time!

My older two step children went through a Lego phase and built all these really cool planes, trucks, and buildings. Well over time they each got destroyed and we now have buckets of Lego’s. Now our 4 year old is starting to show a huge interest in Legos and creating things. I kept all the old manuals and we sat down the other day to put some trucks together and quickly realized that it would take us FOREVER (and way too long for a 4 yr olds attention span)  to find all the pieces to just build one truck. So I had the genius (not so genius idea once I got started) to sort through all the Legos and divide them up by color so it would be easier to find pieces. OMG there are  SO MANY LITTLE pieces!! We did it though after several days and have almost completed our first airplane that my step daughter had assembled years ago. I’m not sure who is prouder of the airplane though me or my son. The airplane is what we worked on as a family once we got home Friday night. We can’t wait to start another project to add to our little collection.

OK! Let’s talk about this delicious little salad I have in the picture of below.  It is a BLT Pasta Salad that is light and perfect for a warm spring day! I love eating salads this time of year as the days are getting hotter. I just want something fresh and not really heavy in the evenings. The pasta has a homemade ranch dressing on it that is so perfect! When you make the dressing it is really thick and like a paste. But it goes on the pasta well and adds a ton of flavor. We love it!

BLT Pasta Salad


  • 2 cups uncooked shell pasta
  • 1 (1oz) packet Hidden Valley ranch dressing mix
  • 1/4 cup bacon bits
  • 1/2 teaspoon onion powder
  • 1/2 cup mayonnaise
  • 1 1/2 cups cut-up cooked turkey or 1 1/2 cup chicken
  • 1/2 cup cherry tomatoes, cut into fourths
  • 1/2 cup julienne strips cheddar cheese
  • 1/2 cup green olives
  • 1/4 cup green onions for garnish
  • 4 cups bite-size pieces lettuce


  1. Cook your pasta according to package instructions.
  2. Combine the Hidden Valley Ranch, onion powder, and mayonnaise and set aside.
  3. Wash and shred your lettuce. Set aside.
  4. Toss together the pasta, chicken, tomatoes, olives, cheese, and ranch dressing.
  5. On each plate lay a bed of lettuce and top with your pasta salad and a sprinkle of green onions.

Buffalo Chicken Sliders

Hi everyone! I hope that everyone is finding themselves doing well this week. It’s spring and it feels great right now in South TX. It hasn’t gotten very hot yet so playing outside is still very doable at anytime during the day. Our neighborhood pool is now open but it is ICE cold!  Regardless we had to go and check it out the other day. The cold didn’t seem to bother my boys one bit. They were in the water playing like it was a warm summer day. My husband and I on the other hand couldn’t get into the water above our calves. Lol!

Right now our three year old has an obsession with wearing gloves. Just one, not both of them. He loves his daddies work gloves, mittens, dish washing gloves… any kind and will wear one of them ALL of the time. Its so funny.

Notice his one read glove that he wore to his birthday party! And look he even got a new glove from his best friend!! He loves it by the way!!

We get it off for bath time and that’s about it. His teachers at school are sweet enough to let him wear his one glove to school. Sweet Lord that child is a hoot! He demands the funniest things that I just have to say ok too because it’s just not worth the battle of arguing. For example, the other day I had painted my nails pink for my big trip to New Orleans and he insisted that I paint his too. Well after two days of saying no and two days of begging I finally caved. I know that is a parental sin to cave but I did!! The next day he went to school with pink nails, one glove, and his underwear on back wards. He insists on putting them on backwards because if they are on correctly you can’t see Spiderman when he is on your bottom. Hee hee!! I couldn’t disagree that the front of the underwear are just to boring so oh well.  He walked with a bit of a wedge that day but he didn’t care. His teachers are always in for a treat when I drop him off at school. 🙂

This week the weather has been perfect for grilling outside. One evening we made some Buffalo Chicken Sliders with a homemade blue cheese dressing. Seriously Yum!! The dressing is rich in taste and has chunks of crumbled blue cheese right in the creamy dressing. I drizzled it on top of the buffalo chicken which sat on a crisp green leaf of lettuce on a soft slider bun.

Buffalo Chicken Sliders


  • 1/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1/2 cup blue cheese
  • 1/2 teaspoon Worcestershire sauce
  • 1 tablespoon finely diced celery
  • 1 tablespoon finely diced red onion
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 boneless, skinless chicken breasts pounded to even thickness
  • 1/3 cup Frank’s Red Hot Sauce
  • cooking spray
  • 18 slider buns or Parkerhouse-style rolls
  • coarsely shredded lettuce


  1. Combine mayonnaise, sour cream, blue cheese, Worcestershire sauce, celery, onion, salt and pepper. Cover and place in refrigerator.
  2. Place your chicken breasts in a large resealable bag with the Frank’s Red Hot Sauce. Seal bag and place in refrigerator for 30 minutes.
  3. Lightly coat foil with cooking spray and place on your grill over medium-high heat. Remove chicken from bag and place on foil. Grill 2-3 minutes per side or until cooked through.
  4. To serve, place shredded lettuce on bottom of buns, top with chicken and blue cheese sauce.


Party Sandwiches


With the Super Bowl coming up many of us will be getting together with friends and family to watch the game. These sandwiches would be great to serve your guests. They are delicious!

Party Sandwiches


  • 1 (12 roll) package of Kings Hawaiian Bread Rolls
  • 1 lb of ham
  • 12 slices of Swiss Cheese
  • 1 8oz container of Philadelphia Onion and Chive cream cheese spread
  • 1/2 cup butter melted
  • 1 Tablespoon Worcestershire Sauce
  • 1/2 Tablespoon minced dried onion
  • 1/4 cup grated Parmesan Cheese


  1. Preheat oven to 350 degrees.
  2. Cut the rolls in half and place the bottom half into the bottom of a 9X13 baking pan.
  3. Place a slice of ham and swiss cheese onto each roll half.
  4. On the top half of each roll spread the cream cheese. Place onto the top of each sandwich.
  5. Combine the butter, Worcestershire sauce, dried onion, and Parmesan Cheese and pour over your completed sandwiches.
  6. Let the sandwiches marinate for about 20 minutes in the sauce.
  7. Cover sandwiches with foil and let bake for 20 minutes or until heated through.

1 (12 count) package King’s Hawaiian Bread Rolls
1 pound black forest ham, cut into 12 slices
12 slices swiss cheese
1 (8 ounce) container Philadelphia Chive & Onion Cream Cheese Spread
1/2 cup butter, melted
1 Tablespoon Worcestershire sauce
1/2 Tablespoon dried minced onion
1/4 cup grated Parmesan cheese
Preheat oven to 350 degrees F.  Cut rolls in half and place the bottom halves in a 9×13″ baking pan.  Place a slice of ham on each roll and top with a slice of swiss cheese.  On the top half of each roll, spread a generous amount of cream cheese spread.  Replace the tops of the rolls to make sandwiches.  In a small bowl, combine melted butter, Worcestershire sauce, minced onion and Parmesan cheese.  Pour over sandwiches and let sit for 20 minutes.  Cover baking pan with foil and bake for 20 minutes or until heated through.


Ham & Potato Soup

Happy New Year friends! I hope everyone is finding themselves doing well this week and is enjoying the start to this new year. 🙂

For Christmas this year my husband and I cooked a ham. We had a lot left over so I am trying to be creative with recipes that I can put ham into. 😉
We love potato soup at our house so this year we are having Ham and Potato soup! Delicious and perfect during this cold weather.

Grilled Cheese Roll Ups

My boys loved this spin on a grilled cheese. We ate ours just like you see in the above picture, but these would be delicious dipped in a hot bowl of tomato soup during these cold months. How do you like to eat your grilled cheese? Do you add meat, veggies, or a combination of cheeses? I’d love to hear!
Grilled Cheese Roll Ups


  • 6 slices of bread (flattened)
  • 1 Tablespoon of butter
  • american cheese


  1. Flattened you bread with a rolling pin so it's easy to roll.
  2. Place a slice of American cheese on the bread and roll it up.
  3. Melt butter in a large pan over medium heat.
  4. Start grilling your rolls in the melted butter with the seam side down to seal.
  5. Grill until the cheese is melted and the bread is slightly toasted.

Buffalo Chicken Wings

Last Saturday night we watched the Texas Longhorns play football as a family. It’s so much fun to see all the boys get so excited about a game wearing their burnt orange shirts. I absolutely love this time of year and watching football together. And there isn’t a better meal to eat while watching a game than chicken wings! This recipe is messy, but easy & delicious! It is given the thumbs up from the men in my family. I hope that you enjoy them as well. What are you favorite types of wings? We love Buffalo sauce on ours.

3/4 cup all purpose flour
1/2 teaspoon cayenne pepper
1/2 teaspoon garlic powder
1/2 teaspoon salt
20 chicken wings
1/2 cup melted butter
1/2 cup Franks Buffalo Wing sauce


  1. Line a baking sheet with aluminum foil, and lightly grease with cooking spray. Place the flour, cayenne pepper, garlic powder, and salt into a resealable plastic bag, and shake to mix. Add the chicken wings, seal, and toss until well coated with the flour mixture. Place the wings onto the prepared baking sheet, and place into the refrigerator. Refrigerate at least 1 hour.
  2. Preheat oven to 400 degrees F
  3. Whisk together the melted butter and hot sauce in a small bowl. Dip the wings into the butter mixture, and place back on the baking sheet. Bake in the preheated oven until the chicken is no longer pink in the center, and crispy on the outside, about 45 minutes. Turn the wings over halfway during cooking so they cook evenly.
  4. For more crispy wings broil for 5 minutes after they are done cooking or until you get the desired crisp that you are wanting.
