Hey Y’all!! How is everybody doing?? We are doing well. Just busy busy busy as this school year comes to an end.It always seems like from the time spring break is over and until the end of the year time just flies by. It’s all a blur.
This last weekend we had the chance to go camping with some of the friends that we have met here in San Antonio. We went to Fredricksburg, TX and stayed at the Yogi Bear Jellystone camp grounds. There were 18 kids (All under the age of 6) and 11 adults!! That’s a lot of little kids my friends!! It was crazy fun and I think we would all go again in a heart beat. The kids got to roast marshmallows, jump on the bounce pad, watch movies, and play board games all together. They had a great time!
But, it rained and rained and rained all weekend!! 🙁 So what do the adults do when it rains all weekend while the kids are all playing in the mud and getting filthy? Go wine tasting (left the kids with the dads…ahem) and take strawberry shots of course!! Ha Ha! My friend made the strawberry treats ahead of time and would bring them out every time us parents needed a little something to get us through the chaos. Smart thinking!!
Camping always make me think of roasting marshmallows and making smore’s. Which we did, and they were super delicious as always! Oh how I love Smore’s!!
Camping also makes me think of warm spring/summer nights and making homemade ice cream. Isn’t homemade ice cream the absolute best? I have the perfect recipe for making ice cream while camping or out on the back porch this summer. It’s perfect because you make it in a bag!! Yes, it’s a thing everybody! Ice Cream in a Bag!! It’s so easy.
All you need is two zip lock bags. One gallon and one sandwich size. Fill your gallon size with 3 cups of ice and 6 Tablespoons of course salt. Pour 1/2 cup of whipping cream, 1 tsp vanilla, and 2 tsp sugar into the sandwich bag.
Place the sandwich bag inside the gallon bag and zip it all up nice and good. Then, shake your bags for 5 minutes or until ice cream is set and it firm.
Once it is firm you can eat it out of the bag or scoop it out into a bowl. This recipe is only for a 1/2 cup of ice cream. It’s perfect for everyone to make their own. If you were to double or triple the recipe note that you would need to shake for 2 or 3 times as long as well. 5 minutes was enough shaking for me, but if you were to have help or make a game of shake and toss the ice cream bag then it would be a perfect evening activity for family and friends!
- 1 gallon zip lock bag
- 1 sandwich zip lock bag
- 3 cups of ice
- 6 Tablespoons course salt
- ½ cup whipping cream
- 1 tsp vanilla
- 2 tsp sugar
- Place 3 cups of ice and 6 Tablespoons of salt inside gallon bag.
- Pour whipping cream. vanilla, and sugar into sandwich bag and zip up.
- Place the sandwich bag inside the gallon bag and seal.
- Shake bags for 5 minutes or until ice cream is firm.
- Serve in bags or scoop out into bowls.
