My mom is my my best friend. Other than my husband and kids her and my dad are our everything. My parents are the most selfless human beings I’ve ever known. They were a huge part of my brothers and my lives growing up and continue to be a now with our families.
Two years ago my mother got very sick and lost about 50 pounds in about 6 months time. For most of us that would be a huge blessing, but for her being 6 ft tall and weighing about 150 lbs to begin with it wasn’t a good thing. She got down to just below 100 lbs at her worst and the doctors were all stumped on what was causing her rapid weight loss. The family was all upset and just knew that the diagnosis once they figured it out wasn’t going to be good. We were losing her and losing her FAST! Finally after a major break down from me and telling her that if she didn’t insist on a complete line of blood work that I was going to personally take her to the dr and do it myself! So she finally put her foot down as well and had a bunch of test done. I’ll never forget the day she called and said she had the results and that she had Celiac Disease. She was so sad because she new her lifestyle was going to drastically change and that it would be hard. My first words were PRAISE THE LORD!! We can deal with this!! She laughed because I was so happy with the news.
Come to fine out though it hasn’t been hard for her AT ALL! There are so many Gluten Free products out there right now that are delicious and affordable. Walmart has a huge selection of products and always makes it easy for us to get good food for a such a great price. My mom is 64 and her whole life has favored fruits and vegetables over breads and sweets anyways. So it wasn’t a huge surprise when she learned more about Celiac disease and discovered that her favorite foods didn’t have wheat in them any way so it wasn’t going to be as hard to change her diet than she thought. Every once in a while she will crave something like pizza or cookies and she has to be more careful about the ingredients. Thank goodness for stores like Walmart that make it easier for people with Celiac.
As you all know I LOVE to cook! And it has been my mission to cook delicious Gluten Free meals for her that we can all enjoy. It’s not as hard as you think with so many great brands providing wheat free foods. At Walmart this passed Saturday they were having a Gluten-Free event displaying all of the wonderful GF foods that Walmart sells. I had to sample some of the pizza and crackers and they were really good. I’m going to have to encourage my mom to pick some up. I bought her some GF bagels recently that she had never tried before and she loved them! I’m always so glad when I can help her find new foods that she enjoys. Udi is one of my mom’s new favorite brands. She loves their bread! I am so thankful that they have provided this for her so that she can continue to have a delicious sandwich.
In the bakery section at Walmart they have many Gluten Free choices that are delicious. I bought the Florence Street Bakery Country Seeded Bread, also by Udi, and the chocolate chip cookies. I’m going to surprise my mom and use the seeded bread to make a French Toast casserole for her this week. Be on the look out for the recipe in the next couple of weeks. The casserole is one of our favorites! So good! We had the cookies last night for dessert and really enjoyed them as well.
