Ok Ladies!! This is where IT IS AT Christmas morning! These Overnight Caramel Rolls are what you are going to want to make for your family! I have made these for years now and they are just the perfect dish. Let me tell you why. First of all you know about my families love for cinnamon. I believe I’ve talked about it here and here. We are obsessed! Also, you make it the night before with frozen rolls and let rise over night. Then in the morning when everyone is waking up and life is chaos because Santa has come. All you have to do is stick these bad boys in the oven, cook for about 20-30 minutes, and you have the most delicious treat to snack on while your family is opening gifts or with your coffee.
There are a lot of different Overnight Caramel Roll recipes out there, and I’ve tried some different ones, but I always go back to this recipe. It’s delicious! I will warn you though, when you leave the dough out on your counter over night to rise and then wake up in the morning you will be shocked at how big the rolls are. You will most likely think that you left them out too long and the dough has exploded. It’s fine! Just place in the oven and cook for the required time. Before taking them out though make sure that your center rolls are done. Sometime the ones in the middle can be softer than the ones on the sides (Those are always the ones my family fight for! And trust me you will too!) So I will always check them at 20-30 minutes and then sometimes let them cook a little longer. It’s up to you. They are good either way! When they are done I let them rest for 5 minutes on the counter. Then I place a cookie sheet, tray, or platter on top of the rolls. You then flip the dish/rolls over onto the platter. So that the bottoms of the rolls that have been cooking in the caramel mixture is all on top.
This is what it will look like:
- 1 package Rhodes frozen dinner rolls
- ½-1 tsp cinnamon (we like a lot)
- ½ cup white sugar
- ½ cup chopped pecans (optional)
- 1 3oz package butterscotch pudding mix (not instant)
- ½ cup butter
- ½ cup brown sugar
- Place 24 rolls in a greased 9x13 pan.
- Sprinkle cinnamon, white sugar, nuts, and pudding on top of the rolls.
- Melt butter and brown sugar in microwave and pour over rolls.
- Cover pan with foil and leave on kitchen counter overnight to rise.
- Bake at 350 for 20-30 minutes.
- Turn out of pan onto platter.
- Serve warm.
