Making this fruit salad and having it along side whatever you are serving is like having dessert on your plate! I have always enjoyed eating sweet and salty things together. For example, I love having salty chips alongside a brownie or a chocolate milkshake with french fries! WOW! I am definitely a food blogger and not a fitness blogger that is FOR SURE! All of those combinations sound absolutely terrible for my health, but oh my goodness they are delicious snacks/treats! Don’t worry, I don’t allow myself to eat like that very often. But, every once in a while when it has been “that” kind of day it is fun to go through the drive through at Whataburger and get one of their delicious chocolate shakes with a side of fries. Oh my goodness it just makes everything right in the world! So I’m sure you can imagine then why I love having this fruit salad with our Thanksgiving meal. It’s the perfect sweet side dish on my plate. I love to eat a little salad, then some turkey, a little salad, and then some mashed potatoes…. you see the pattern! Enough about my goofy eating habits. 🙂
Another reason I love this salad is because it is so so so easy. And like I have said before you want all the easy dishes you can make on Thanksgiving because when cooking for a crowd you are crazy busy and you need dishes quick and easy. You can make this dish along with my mashed potatoes a couple of hours ahead so you will have plenty of time to work on the last minute stuff. Just make this salad and stick it in the fridge covered for a couple of hours before serving. Done!
- 1 can chunk pineapple
- 2 cans mandarin oranges
- 1 cup miniature marshmallows
- 1 1/2 cups coconut
- 1 8oz sour cream
- Combine all ingredients into a large bowl.
- I always put the mandarin oranges in last because they break up easily and I like for them to stay whole. They are very fragile. :)
- Keep cool in the refrigerator until ready to serve.
