Do you enjoy fireworks? We always love going to a show if there is going to be one near by. The house that we moved to in San Antonio is right outside the city limits and on New Years Eve and July fourth the fireworks are set off like crazy out in our neighborhood!! On New Years all the fireworks went off at midnight which was really cool. It was like we had our own show in the back yard. On the fourth people shot them off for hours as soon as it got dark which was still pretty fun to watch. It just made going to sleep more difficult… 😉
Well on Sunday, we went to Sea World to beat the August heat and to see their end of summer firework show. It was Amazing!!! For those of you that have been to Sea World might know that they set these fireworks off at the Ski Lake where they do all the ski shows. We sat across from the bleachers on the other side of the lake on the grass. Oh my goodness, it often felt like the fireworks were going to fall on us they were so close. I had to squint it was so bright. It was really a great show and I was really glad that our whole family was able to be together to watch the show. It made our summer coming to an end special.
Another way to beat the end of summer heat is to consume this juicy & refreshing Fruit & Veggie Salad! If you are looking for a super healthy and refreshing side salad with your meal then this is what you are going to want to make tonight! The apples and the little bit of honey that is in the salad make it a little sweet. It’s SO good! I can’t wait to make this salad again. Because of the vinegar in the salad you can make it up to 3 hours before dinner and you wont have to worry about your apples turning brown. At our local grocery store they sell broccoli slaw & Cole slaw in bags already chopped up and ready to go. So basically the hardest part of making this salad was cutting up my apple into thin strips and dicing up some green onions for the top. EASY!!
- 1/4 cup red wine vinegar
- 2 Tbsp honey
- 1 (1oz) package fresh basil, chopped
- 1/2 cup olive oil
- 1 tsp salt
- 1 bag of broccoli slaw
- 1 bag of coleslaw
- 1 large Granny Smith apple, cut into thin strips
- 1 bunch of green onions, sliced
- Combine first five ingredients in bowl and set aside.
- In your salad bowl combine the broccoli slaw, coleslaw, and apple.
- Pour dressing over the fruit and veggies and stir to make sure it mixes well with the salad.
- Refrigerate up to 3 hours before serving.
- Salt & Pepper to taste before you serve your salad.
