Happy hot summer days Friends!! I hope that everyone is doing well and enjoying some vacation time this week as we celebrate this wonderful country that we live in!
I’ve been making a lot of salads lately and I recommend you trying this easy, pretty lunch or dinner iceberg wedge salad that has lettuce, fresh veggies, & bacon crumbles with a light vinaigrette drizzled on top. It is very light and refreshing on these hot summer days. My favorite way to cook bacon for this salad is in the microwave. Have you ever tried it this way? It’s easy and I think less messy. I put about 4-6 slices in between 2 paper towels and then microwave on high a minute per slice. So, if I have 4 slices of bacon I will microwave them for 4 minutes. Throw the paper towels away, wipe your tray if there is any extra grease, and your done!
Are many of you going out to 4th of July picnics or to the pool? When we go to a party I always seem to end up bringing a salad. Not sure how I always get this job. 🙂 It’s ok though because we LOVE yummy salads. If its an outdoor event I always worry about taking salads that have mayo on them and then having them sit out in the heat and go bad. I would hate to be that person that got the whole crowd sick!! It’s a fear people!! So, I always play it safe. Or try to anyway. So, if you are needing a salad to take to a party this weekend and don’t want to worry about creamy dressing sitting out in the heat then this would be a good one to take. You could cut individual wedges ahead of time and people could put their favorite toppings on themselves. Then drizzle with this yummy homemade dressing. You’d be the hit of the party!

I haven’t seen a lot of iceberg recipes out there in a while so I thought if would be fun to share this one with you. I hope you enjoy this hunk of supercrisp iceberg lettuce cloaked in a tangy vinaigrette topped with bacon, carrots, & chives as much as we do!
