This last weekend we flew to Indiana to go to my brother in laws wedding. We had such a good time! I love visiting my husbands family. His family is huge, Joe is 10th out of 11 siblings. Can you imagine?!?! The weddings are always a blast to go to in the family. The are big, loud, and always have fun dancing. I wanted to have taken more pictures of the event but our 3 yr old had just woken up from a nap and was in the worst of moods. I think I carried him 80% of the time while at the wedding. Looking back at other peoples pictures of the wedding you see me off to the side with a 40 lb child on my hip, that is way too big to be carried, but I was desperately trying to avoid a major melt down in front of so many people that I just carried him around sweating buckets. Below is what I looked like almost the entire time!
The wedding was at a beautiful apple orchard Vincennes IN. Have you ever been to that part of the US? Or maybe some of you live in IN. It’s just gorgeous! The small rolling hills were so green and there were a ton of wild flowers. I love all of the small little towns that you drive through in IN. All of the charming old houses and beautiful farms just make me want to pack my bags and become a farmers wife with chickens. I’ve secretly, until now, have always wanted chickens. Someday maybe…. 😉
We have driven MANY times from Austin to Indiana which takes us about 16 hours!! We considered driving again this time but I begged my husband to fly. We are two hrs south west of Austin now and I just couldn’t imagine the extra hours on the road. So, Thankfully we were able to find some decent tickets flying out of Houston. We had to leave super early but it was totally worth it vs driving with little kids. Plus I got to see my brother and his wife in Houston which was a huge bonus for us. Our boys, so far, have been great little fliers.
Now on to this yummy sandwich! I haven’t always eaten a lot of pork, but have found some really great recipes in the past few years, and it has now become a staple in our home. Chipotle Shredded Pork Sandwiches are a favorite at our house. On a busy day or on a slow summer weekend these sandwiches will make your day! Even though they are cooked in the slow cooker they have a smoky chipotle taste that is de.lish! Top it with your favorite bar b que sauce and place on a warm toasted bun and you have just died and gone to pork heaven!
- 2 lbs boneless pork shoulder
- 1 package of A.1. Chipotle BBQ Marinade Mix
- 1/4 cup apple cider vinegar or white vinegar
- 2 Tbsp. olive oil
- 2 Tbsp. water
- Your favorite bbq sauce
- Combine your A.1. Chipotle mix, vinegar, oil, & water in a small bowl.
- Pour over pork and let marinate 8 hrs or overnight.
- In the slow cooker cook on low for 6-8 hrs or on high for 4-6 hrs. depending on hot your cooker gets. Mine cooks fast so I usually can shorten my cook time.
- Once you can pull your pork a part with two forks with little effort it is done!
- Place on hamburger or sandwich buns and top with your favorite bbq sauce!
