I am a music fan! I really am! All of my life I have enjoyed listening to music and it can totally change my mood depending on the type of music I am listening to at the time. When I work out, for example, music can totally inspire me to ran faster and to forget about how tired I really am. Listening to Christian music can spiritually fill my soul with my love for Jesus and give me hope for our future. Hearing a song that brings back a sad memory can make me break down into tears like a crazy lady while driving. 🙂 Music fills my cup! I love it!
I will never forget the first little radio my parents gave me when I was little it was a little fm/am turn dial with a long metal antenna. Then I got a “jam” box that came with two cassette players attached. So Cool! Then as I got older I got a “Walkman” and was able to listen to my own music while driving around with my parents. That must of have been my middle school years. 😉 Then I believe in high school I was able to buy a disc man I think it was called. I can’t remember, but I think through college I listened to tapes and cds in my car. I made mix tapes and would listen to them over and over. I would actually keep driving around the block just to finish a song before going into wherever I was going.
Well for some reason when I got married and then had children of my own I totally missed the downloading music to your phone/itouch/ipad etc… phase of listening to music. It seems like I’ve gone years without privately listening to my own music for just me. Actually it has been years. And I must say I really miss this past time fun! So, two days ago I did it! I downloaded some music to my phone so that when I went to the gym I didn’t have to just listened to the radio or watch the TVs because Friends, that just wasn’t cutting it for the inspiration that I needed to run and burn off this extra food blogging poundage! What a difference it made! I was jamming to my music and I ran and ran and ran my legs away. It felt SO good guys! It really did and I was so happy listening to some of my favorite music. I so badly wanted to sing out loud though!! hee hee 😉 I don’t think my fellow treadmill partners would have enjoyed their runs though if I had done that. Ha Ha!
As I have mentioned before one of the reasons that I am having to workout is because of my love for food blogging and making delicious dishes such as this one. Today I am sharing with you the recipe for Baked Gnocchi in a Basil Prosciutto Cream Sauce. The basil cream sauce is savory and adds a delicious flavor to the gnocchi! It is made with heavy cream, butter, and Pecorino Romano cheese. This dish makes a lot of gnocchi and you really only want to eat this as a side. It alone is very filling. My little guys don’t enjoy this type food yet so it was just my husband and I eating this one. We ate it along side steak, baked chicken, and grilled sausage. Like I said, this recipe made a ton for just two people so we ate on it for a couple of days, but we enjoyed it each time. It saved well. Have you ever eaten Gnocchi? If so, what kind of cream sauce did you have with it or did you eat it by itself?
- 3lbs cooked gnocchi
- 2 Cups Heavy Cream
- 4 Tbsp. Butter
- 3/4 Tsp. salt
- 1/2 Tsp. Pepper
- 1/4 Cup Basil, Chopped
- 1/4 Lb. Prosciutto, Chopped
- 1/2 Cup Pecorino Romano cheese
- Preheat oven to 375.
- Warm cream and butter over medium low heat until butter is melted.
- Remove from heat and stir in salt, pepper, basil and 1/4 cup cheese.
- Cook Gnocchi according to package instructions. It cooks quickly so prepare for that.
- Lightly butter a 9x13 baking dish. Add gnocchi and prosciutto to the dish.
- Pour cream sauce over.
- Top with remaining 1/4 cup cheese.
- Bake 375° for about 25 minutes or until lightly browned on top. Let sit for 5-10 minutes to set.
